Spinach and Rocket Pesto

Spinach and rocket pesto is so easy to make and is an alternative to basil pesto that's well worth a try. This recipe was created by our in-store demonstrator, Paulene, who regularly uses this pesto as a tasty filling for a toasted sandwich or wrap.
The addition of sun-dried tomatoes gives the pesto a rich, tangy flavour. Add as many as you like depending on your taste. Made in minutes with the help of the Dualit Hand Blender .

Ingredients
Large handful of spinach
Large handful of rocket
Sun-dried tomatoes
1 garlic clove
2 tsp parmesan
1 spring onion
Olive oil
Juice of ½ lemon

Method
Add all the ingredients to the Hand Blender chopping bowl.
Blend until all ingredients are combined and form a paste. It doesn't have to be completely smooth. If it's too thick add a little olive oil.
Season to taste with salt and black pepper.
