Coffee & Walnut Mug Cake

A delicious coffee and walnut mug cake, made in the Dualit Cappuccino Cups Set with the help of our trusty Hand Mixer - perfect for you and a friend!


  1. Make a single shot of espresso (we'd recommend using one of our Aluminium or Compostable Coffee Capsules but any coffee will work for this recipe). Set your espresso to one side and allow to cool.
  2. In a separate bowl, use the Dualit Hand Mixer with Flat Beater Attachments to mix the flour, baking powder, sugar, oil, cocoa powder, milk and egg together. If you want to add finely chopped walnuts to your cake batter for a little crunch, also add these now.
  3. Remove one teaspoon of the cooled coffee and set aside to use for the frosting, before adding the remaining cooled coffee to the cake batter.
  4. Evenly spoon the mixture into two Dualit Cappuccino Cups.
  5. Place one mug into the microwave for 45 seconds, before inserting a metal skewer into the centre of your mug cake to check if it is cooked. If the skewer comes out clean, your mug cake is ready, if it does not come out clean, place it back into the microwave for a further 15 seconds.
  6. Once cooked through, remove the mug from the microwave and repeat step 5 for the second mug.
  7. Make the frosting by adding the butter, icing sugar and teaspoon of coffee into a small bowl. Mix until a smooth paste is formed. If your mix is too loose, add more icing sugar.
  8. While the cakes are still warm, use a spoon to cover the top of each with frosting before sprinkling on an even amount of chopped walnuts.
  9. To make your coffee and walnut cake look like a cappuccino, cover with swirls of whipped or squirty cream and dust with cocoa powder.


Top Tips:

  • The recipe is based on using an 800w Microwave Oven. If your microwave has a higher power, cook your mug cake in 15 second intervals and check as cooking may take less time. Alternatively, if your microwave has a lower power, cook for 45 seconds before checking, then continue to cook in 15 second intervals. Cooking may take longer for lower power microwaves.
  • Marscapone or cream cheese can be used for the topping in place of the butter. Simply use the same amount as the quantity of butter stated in this recipe and follow the same steps.
  • Do not be tempted to overfill your mug with batter as the cake will rise in the cup.
  • The cake will drop slightly when opening the door after each cooking interval, but will rise again when the microwave is switched back on. Do not worry, this is normal and will not alter the taste or baking of the cake.
