• 1 Red onion
• 1 Garlic clove
• 2 Tsp brown sugar
• 1 Tbsp Tomato puree
• 1 Tbsp Balsamic vinegar ( if using sweet, use less brown sugar )
• 2 Tbsp white wine vinegar
• 3 Stalks of mint, leaves only stalks removed.
• 100ml water
