Minted pea and feta tarts

Sweet peas and feta in a short pastry case
Serves: 6 Preparation Time: 20 minutes Cooking Time: 30 minutes

Minted peas and feta married together and served in a pastry case.

Ingredients

  • 200g frozen peas (defrosted)
  • 1 Garlic clove
  • 100g Feta cheese
  • Juice of half lemon
  • 1 Tsp Chilli flakes. or (half fresh chilli finely chopped)
  • 1 pack Shortcurst pastry sheet (175g used in this recipe)
  • 1 Tsp Honey
  • 1 Tbsp greek yoghurt
  • 8-10 Mint leaves ( stalks removed)
  • 2-3 Spring onions.
  • Salt and pepper to taste.
  • 1 Pint boiling water for peas.
