Dualit Product Recipe

Marmalade Loaf

Most of us have a jar of marmalade in the cupboard, so why not use it for something other than toast? This easy recipe just requires popping all the ingredients together and cooking in a loaf tin, so pretty simple!
Serves: Makes: 1 x Loaf Cooking Time: 1 hour 15 minutes

This loaf cake, made with Dualit's Hand Mixer, was created by our very own in-store demonstrator. The finished Marmalade Loaf will keep for 3-4 days in a sealed tin.

Ingredients

  • 150g marmalade
  • 175g butter or margarine (preferably butter)
  • 175g muscovado sugar
  • 3 x eggs (beaten)
  • 225g self raising flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon mixed spice
  • 2 teaspoons ground ginger
  • 100g pecans or walnuts
Method
  • Leave aside 1 tablespoon of Marmalade.
  • Line loaf tin with greaseproof paper.
  • Mix marmalade, butter, sugar, eggs, flour, baking powder and spices for approximately 2 mins until smooth.
  • Stir in about 75g of nuts.
  • Pour into the loaf tin, smooth and sprinkle over the remaining nuts.
  • Bake at180C /160C fan for 1hr - 1hr 15mins (cover very loosely with foil after 45 mins)
  • Once cooked remove from the tin
  • Heat the remaining Marmalade until it resembles a smooth, thick liquid and spread over the warm loaf.
