A quick and tasty way to cook lamb, with no smoky fumes or spattering of fat.
4-6 lamb chops or cutlets
salt and pepper
Preheat oven to 230°C, set to Convection, rack position B.
Place the grill tray in the oven tray.
Sprinkle the chops with salt and pepper and rub into the meat and fat.
Bake for 5 minutes on one side, turn over and bake for 3-5 minutes the other side.
Place the cutlets on top of the oven (still on the double tray) for five minutes or so to rest before serving.
