Coconut Ice
Coconut ice is a favourite sweet of ours and a great idea to give as a homemade gift at Christmas. You can make this several weeks in advance of the big day and store in an airtight container in the fridge.

Made with the help of the Dualit Hand Mixer, coconut ice is a simple traybake that can be customised with your favourite toppings; white chocolate chips, cranberries, glace cherries, mini marshmallows - add your favourite to the mixture to make it even tastier!
Ingredients
- 200g desiccated coconut
- 250g royal icing sugar
- 150g condensed milk
- 75g chocolate drops, cranberries or topping of your choice
- 2-4 tsps warm water
- Pink food colouring
- You will need a large bowl, 1 x 9" tray bake cake tin, cling film, sheet of greaseproof paper.
Method
- In a large bowl combine the icing sugar and coconut.
- Using the flat beaters on the Dualit Hand Mixer on low speed, slowly pour in the condensed milk to bind the mixture. This is where you can add a little water to help the mixture along.
- When the mixture becomes firm, divide in half and set aside one part.
- Colour one half of the mixture with a few drops of the pink food colouring and mix in the cranberries, chocolate pieces etc.
- Using a metal spoon, press the pink mixture into a lined traybake tin, making sure it is evenly spread.
- Take the white mixture and press over the top of the pink. Smooth over with a palette knife.
- Cover with cling film and place in the fridge for around an hour to set, or preferably overnight.
- When set, cut into small squares.
Top Tips
- Try scattering some cranberries or chocolate pieces on top for decoration.
- These are great for gifts at Christmas; place into small clear bags, mini cupcake boxes, in a cup or in a nice personalised dish. Tie bags with twine or ribbon.
