Chocolate Cupcakes with Peanut Butter Frosting

Delicious chocolate cupcakes finished with a rich peanut butter frosting - after one you'll find yourself wanting more!
Serves: 12 Preparation Time: 30 minutes Cooking Time: 35 minutes

We've used the Dualit Hand Mixer to make up these super simple, yet super tasty chocolate cupcakes, finished with homemade peanut butter frosting (made with the help of our Hand Blender) for an indulgent finish.

Ingredients

  • 200g Self Raising Flour
  • 200g Castor Sugar
  • 4 Medium Eggs
  • 200g Stork
  • 100g Cocoa Powder
  • 50ml Hot Water
  • 100g Unsalted Peanuts
  • 150g Icing Sugar
  • 4 tbsp Warm Water
  • 1 tsp Cocoa Powder
  • 50g Butter
Method
  1. Preheat oven to 180º/160º fan.
  2. Add the flour, baking powder, sugar and cocoa powder into a bowl and mix together using a wooden spoon. Set aside.
  3. In a separate bowl, use the Dualit Hand Mixer with Flat Beater Attachments to mix the eggs and stork together.
  4. Once well combined, slowly pour the wet ingredients into the dry ingredients, whisking continuously to form a smooth batter.
  5. Line a muffin tin with cases.
  6. Using an ice cream scoop, begin to fill the cases with the chocolate cupcake mix. Aim to fill the cases up about 2/3 of the way, leaving room for the cakes to rise.
  7. Place the tin in the oven and bake for 15-20 minutes, or until the top is firm and a skewer comes out clean.
  8. Take the cupcakes out of the muffin tin and place on a wire rack to cool.
  9. Whilst the cupcakes are cooling, place the unsalted peanuts and 50ml of water into a bowl and use the Dualit Hand Blender to blend them into a paste.
  10. Then, add the rest of the water and the icing sugar into the bowl and use the Hand Mixer to whip up a frosting.
  11. Once the cakes are completely cool, use a piping bag to pipe on the peanut butter frosting.
  12. Enjoy!
