A tasty fruit cake for the special occasion.
225g-light/or dark muscvado sugar
225g self-raising flour
225g butter
3 large eggs
900g sultanas/raisins-mixed
1 tsp mixed spice
1 tblsp treacle
1 large apple grated
1 lemon and 1 orange rind
1 small 50g pot glace whole cherries.
1 tblsp of brandy/whisky (optional)
Grate the apple in the small bowl fitted with the grating disc
(large holes) and set aside (add a squeeze of orange or lemon juice
to stop the apple from browning. Also add the brandy/ whisky to
this mixture).
Process together the sugar, flour, butter, eggs, treacle and spice
in the large bowl fitted with its chopping blade.
Pulse in the sultanas and raisins in 2-3 stages. Let the fruit drop
and pulse again.
Remove the chopping blade from the large bowl and stir in the lemon
and orange rinds, whole cherries and grated apple mixture.
Pour into a well buttered 23cm cake tin.
Bake in a preheated oven 175ºC/Gas Mark 3-4 for 1 ½- 2hrs.
Leave to cool and serve
