Strawberry Flan
Kick off this summer with a slice of fruity strawberry flan. Our easy recipe is one for everyone, overflowing with fresh strawberries and a dollop of clotted cream, this dessert makes for the perfect summery pudding.

"This strawberry flan is just so easy to make, it has always been my 'go-to' recipe for a quick summery dessert. My whole family loves it and the flan base is readily available from most stores. This recipe is also brilliant as kids can get involved in making it."
You won't need to spend most of the day making this one... it can be whipped up in just 15 minutes!
Ingredients
- 1 ready made sponge flan case
- 250g cream cheese or mascarpone
- 2 tbsp icing sugar
- 2 punnets of strawberries
- 2 tbsp caster sugar for coulis
- Icing sugar to dust
- Clotted cream (optional)
- Sprig of mint
Method
- Using the Dualit Hand Blender, blend half a punnet of strawberries with the caster sugar to create a strawberry coulis, and set aside. Add the sugar one spoon at a time and taste as some strawberries will be sweeter than others.
- Using the Dualit Hand Mixer with the balloon whisk attachment, mix the icing sugar into the cream cheese.
- Spread the cream cheese mix evenly over the base of the flan case, bringing the mix up to the sides.
- Halve the remaining strawberries and arrange flat side down on the flan base until completely covered.
- Pour the coulis over the flan ensuring all strawberries are covered.
- Place in the fridge to chill.
- Dust with icing sugar before serving with a dollop of fresh clotted cream and a sprig of fresh mint leaves. Enjoy!
Top tips:
- Mix it up with a variety of fresh berries; blueberries and raspberries are a delicious summer addition.
- To speed up the process even more, store a flan case and berries in the freezer. Cream cheese kept in the fridge also has a long use by date. Next time you fancy whipping up this dessert, your ingredients will be ready and waiting!
