A wonderfully spicy soup made using the food processor.
Shopping List
- Olive oil
- 1 medium red onion
- 1 medium potato
- 250g sweet potato
- 250g pumpkin or butternut squash
- 75g split red lentils
- 1 tsp ground cumin
- 1 tsp coriander
- 1 litre vegetable stock
- Salt & pepper
- Croutons
- Fresh parsley or coriander, to garnish
Method
- Roughly chop onion, pumpkin/squash and potatoes in the large
food processor bowl fitted with the large blade, using the Auto
Pulse function
- Remove chopped mixture from the large bowl and pan fry together
with the lentils, cumin, coriander and vegetable stock
- Bring to the boil, cover and simmer for 30mins
- Pour into large food processor bowl and use the large blade to
process until puréed/ smooth. If making a larger mixture use Auto
Pulse to maximise volume
- Add seasoning to taste
- Serve in a soup bowl, add croutons and garnish with fresh
parsley or coriander
