Put the oats, coconut, flour and sugar into a bowl.
Melt the butter in a small pan and stir in the honey.
Add the bicarbonate of soda to 2 tablespoons of boiling water
and then stir into butter mix.
Make a well in the middle of the dry ingredients and pour in
the butter & syrup mixture.
Gently mix together.
Put dessert spoons of the mixture onto a greased baking tray
about 2.5cm apart to allow for spreading.
Bake in batches for 8-10 minutes until golden brown.
Leave to cool on wire rack.
