Summer Berry Ice Cream

Our Mixed Berry Ice Cream is bursting with fresh summer fruit, perfect for cooling off on a hot day.
Serves: 6 Preparation Time: 10 minutes

Summer in a bowl! This recipe proves that you don't need a long list of ingredients and to spend a whole day in the kitchen to create a luxurious dessert. Our Summer Berry Ice Cream is packed with colour and flavour and can be served alongside pies, tarts, cakes, cookies or pancakes Take the hard work out of the prep by using our Dualit Hand Blender to mix the ingredients.

Ingredients

  • 200-250ml double cream or natural yoghurt
  • 300g mixed frozen berries
  • 1-2 tbsp icing sugar
  • 1 pack of meringue nests (optional)
Method
  1. Using the Dualit Hand Blender, add all the ingredients to the large blending jug. Using the blending wand attachment, press down into the jug and blend until smooth.
  2. Spoon into individual meringue nests immediately, or place in the freezer in a covered container until ready. It really is this simple!

Top tips...

  • Add more cream if a looser consistency is preferred.
  • Natural yoghurt or soy yoghurt can be in place of double cream, you may need to place in the freezer for 30 minutes after blending to allow to set.
  • If using the Dualit VortecS Blender, add the cream first and the frozen berries on top, then pulse a few times to distribute the berries, and blend.
  • The frozen berries freeze the double cream as its being whipped to produce an instant ice cream.
  • Mix and match your frozen fruits for a variety of flavours.
