Spicy Blackened Chicken Burger

Deliciously spicy chicken with a blackened crust served with a zingy lime mayonnaise. This burger will become a firm fakeaway favourite!

Coating the chicken with spices helps create a delicious blackened crust on this burger and the jalapeño pepper provides another layer of heat. Flavour and juiciness are in abundance in this burger and together with the creamy cheese topping, sweet onions and tangy lime mayo provide a great taste.

Method
  1. Cover the base of a chopping board with cling film.
  2. Mix together the onion salt, garlic powder, allspice and salt and pepper and sprinkle half of it over the cling film.
  3. Place the chicken breasts on top of the spice mix leaving a little space between the two breasts.
  4. Sprinkle the remaining spice mix over the chicken breasts and cover with another piece of cling film.
  5. Use a rolling pin to flatten the chicken breasts, gently tapping until they are relatively flat. Place into a fridge and leave to marinade for at least 30 minutes, removing 10 minutes before frying.
  6. Thinly slice the red onion and jalepeno pepper into rings and set aside.
  7. Heat the oil in a frying pan ensuring the pan is extra hot, then add the chicken breasts and any excess spices.
  8. Cook for a few minutes on each side (chicken will turn white) turning over to cook both sides. Use a spatula to gently press down on the chicken whilst its frying to ensure the centre is throughly cooked. This can also be checked by using a sharp knife to cut through the centre.
  9. Keep the heat high to produce a smoke as we want to blacken the chicken. When this is acheived cover and place in a preheated oven to keep warm.
  10. Make the mayonnaise by adding the oil, garlic, egg and lime juice to the Hand Blender jug. Use the blending wand on high speed to emulsify and blend together, ensuring you keep the blender static on the bottom of the jug until it thickens, then slowly raise the blending wand to the top of the mixture; instant mayonnaise! This will take approximately one minute.
  11. To assemble the burgers use a large piece of foil for each burger and place the bottom half of a bun on each piece of foil. Spoon on a little mayo then place a few of the onion rings on top. Add a slice of the mexican cheese then place a chicken breast on top and sprinkle with the jalepeno peppers and more onion. Spoon on a little more mayo and add another slice of cheese, then place the top of the bun on and wrap into a tight parcel with the foil.
  12. Serve the burger still wrapped in the foil, the cheese will be perfectly melted and the bun warmed by the chicken, with a mayo side for dipping and fries.

Top tips:

  • Any leftover onion and peppers can be served as a side along with the lime mayo.
  • Add a layer of crispy iceberg or romaine lettuce under the chicken for extra crunch.
  • The chicken can be cut into strips if preffered and also to ensure complete cooking is acheived.
  • Allow the chicken breast to marinate in the spices for as long as possible. Extra spice can be added to suit your taste.
  • Serve in flatbreads rather than burger buns or on a bed of fresh, crispy salad.
  • Squeeze a little lime juice over the burger just before wrapping.
