Be prepared for sticky hands and faces...our cornflake nests
ooze with chocolate, chocolate and a little more chocolate! Filled
with mini marshmallows and mini chocolate cream eggs, these Easter
nests are a firm favourite.
Ingredients
125g cornflakes
100ml syrup
1 tbsp cocoa powder
50g butter
1-2 mini cream eggs per nest
2-3 mini marshmallows per nest
1 chocolate flake
50g melted white chocolate drops
1-2 mini coloured eggs per nest
Method
In a large saucepan over a low heat add the butter and syrup
and gently stir until loose and the butter has melted.
Add the cocoa powder and stir, then remove from the heat.
Add the cornflakes and carefully mix together until fully
coated with the syrup mix.
Set aside for 5 minutes, no longer otherwise the mixture may
harden.
Spoon the mixture into your muffin cases. For ease, have a bowl
of water to dip a metal spoon into to help shape the nests without
sticking.
Place in the fridge to cool and set.
One the nests have set, melt the white chocolate and place a
spoonful into each nest. Add a few mini marshmallows into the
melted chocolate.
Top the nests with the mini eggs and crumble the flake over
each nest.
Place back in the fridge to allow the white chocolate to
harden.
Once set, these sweet treats are ready to enjoy straight
away!
Top Tips...
Use plant butter for a dairy free option.
The chocolate syrup mix can also be made in the microwave: melt
the butter into the syrup, add cocoa and leave to sit for a few
minutes before adding cornflakes. Then follow from step 3.
Use a kitchen blow torch to lightly toast the marshmallows.
Adults only and use safely.
Cornflake Nests make great Easter gifts in place of the usual
easter eggs and can be designed specifically for the lucky
recipient, i.e. vegan, dairy free, extra toppings!
Mix it up! Replace some of the cornflakes with rice crispies,
jumbo oats or hazlenuts. You could even try a butterscotch
syrup.
