This is wonderfully good for you, as well as being a treat. The juiciest results come from oily fish: e.g. salmon, trout, tuna, sea bass etc. You may need to brush/drizzle white fish steaks, such as turbot, brill, halibut, or cod, with a little olive oil before cooking.
2 x 150g (5oz) thick fish steaks, all bones removed
salt and pepper
1 lemon, quartered
Preheat oven to 230ºC, set to Bake, shelf position B.
Line the roasting tray with a silicone mat or baking parchment. Season the fish steaks with salt
and pepper and place on the tray.
Cook for 14 minutes. If you like salmon or tuna rare in the middle, simply cook for less time.
Serve garnished with lemon wedges.
