Sweetcorn Fritters
This easy recipe for sweetcorn fritters uses minimal ingredients but creates a tasty and filling lunch for all the family.

We've used the Dualit Hand Mixer to create these delicious fritters, using the flat beater attachment. This vegetarian recipe was created by our very own in-store demonstrator, Paulene.
Ingredients
- 1 x 400g tin of sweetcorn
- 1 x teaspoon of cumin (this can be curry, chilli or any preference)
- 1 x small chopped onion
- 2 x eggs
- 100g of flour (any)
- Salt and pepper
Method
- Mix all ingredients into a thick batter using the Dualit Hand Mixer with flat beaters
- Heat a small amount of oil in a frying pan
- Using a tablespoon, place small individual heaps of the mixture into the pan
- Fry until golden, turn over and repeat
- Serve with a salad, chips, jacket potato or a nice guacamole or salsa!
Top tips:
- Add grated cheese to the mix for a little richness
- Add chopped coriander if available to take the recipe to another level!
- If you have spare courgettes these can bulk the recipe out for more servings
