Chicken Curry with Yellow Garlic Rice
A delicious curry dish that makes a great family meal and is mild enough for young children to enjoy.

This flavoursome dinner is made with Dualit's Hand Blender chopper bowl attachment.
Ingredients
- 4 skinned chicken breasts
- 2.5cm piece of ginger
- 1 onion
- 2 garlic cloves
- 2 tbsp vegetable oil
- 2 tbsp mild curry powder
- 200ml chicken stock
- Salt and pepper
- 4 tbsp creme fraiche
- Handful of fresh coriander
Yellow Rice Ingredients
- 1 onion
- 35g butter
- Stick of cinnamon
- 1 tsp ground turmeric
- 225g long grain rice
- 600 ml chicken stock
- Salt and pepper
Method
- Leaving the skin on, grate the ginger and leave to one side.
- Using the Hand Blender chopper bowl, dice both the onions and garlic cloves.
- Cut the chicken into small pieces.
- Heat half the oil in a frying pan, add the chicken and cook until browned all over. Remove from the pan.
- Heat the rest of the oil and cook the onion and garlic on a low to medium heat for up to 15 minutes, or until it turns a deep golden colour. Take half out for the rice and set aside.
- Stir in the ginger and curry powder, cook for one minute then add the chicken, stock, salt and pepper. Put the lid on and cook on a low heat, stirring occasionally for 20 minutes.
- To make the yellow rice, in a seperate pan add the onion mixture, butter, cinnamon stick, turmeric, salt and rice. Cook on a low heat for one minute until the rice looks transparent.
- Pour the stock into the rice mixture, place a lid on the pan and simmer for 15 - 20 minutes until the rice is tender and the stock has been absorbed.
- When the chicken mixture has finished, take off the heat and stir in the creme fraiche.
- Put the coriander in the chopper to blitz and sprinkle on top of the finished dish.
