Delicious served hot or cold, Watercress and Potato Soup is a culinary classic. Try our version of this healthy, low fat but tasty soup. It is packed with vitamins and makes a sustaining lunch when on a weight reducing diet.

Shopping List

  • 1 medium onion, peeled and chopped

  • 1.3 litres stock made from a powder or a light chicken stock

  • 200g potatoes, peeled and chopped

  • 200g watercress (2 bags)

  • Salt and pepper

Method

  1. Cook the onion in 200ml of the stock until soft and sweet.
  2. Add the potatoes, salt and pepper and bring to the boil.
  3. Boil gently until the potatoes are soft.
  4. Add the watercress, using both leaves and stalks and let it wilt for a minute or so.
  5. Pour into the large bowl fitted with its chopping blade; add the remaining stock and whiz until smooth.
  6. Check the seasoning, and serve.
