- Preheat oven to 160°C/140°C fan assisted.
- Add the oil into a muffin tin and place in the hot oven. This helps the Yorkshires rise exceptionally well.
- Place the eggs, milk, flour and salt into a large bowl and mix until a smooth, loose consistency.
- Once completely combined pour in the sparkling water and stir.
- Remove the tin from the oven and immediately pour in the batter, the mixture will sizzle.
- Bake in the oven for 15 minutes or until golden brown.

Top tip:
For mini toad in the holes, follow the same method but place half a cooked sausage in the tin first before pouring over the batter.
