White Chocolate and Raspberry Blondies

Blondies are a rich and sweet dessert bar that resemble a traditional brownie. They are made using vanilla extract instead of cocoa powder.

White Chocolate and Raspberry Blondies

Cooking Time: 35 minutes

These tasty White Chocolate and Raspberry Blondies were created by blogger Brit Woodruff.

Method
  1. Preheat the oven to 180ºC and line a baking tray with baking paper.
  2. Melt the vegan butter over a low heat.
  3. Chop the white chocolate.
  4. With the Dualit Hand Mixer, add the no egg replacers (or eggs), sugar and vanilla, whisk for around 5 minutes until very thick.
  5. Add the butter into the sugar mixture then the flour and baking powder.
  6. Gently fold in the chopped white chocolate and raspberries.
  7. Pour the mixture into the lined tin and sprinkle with the extra raspberries.
  8. Bake for 30-35 minutes until golden.
  9. Leave to cool in the tin then lift out when cool.
  10. Drizzle with the melted chocolate to decorate then leave to set.
  11. Cut into squares and enjoy.
