- Heat the oven to 200c/180c fan or gas mark 6
- Put the pork, fennel seeds, chilli and half the lemon zest into a large mixing bowl.
- Mix together thoroughly using the Hand Mixer with flat beaters (use a slow speed).
- With wet hands, shape the mixture into four equal sized patties.
- Place on a baking tray and cook for approximately 20-30 minutes until cooked through.
- While the burgers are cooking, prepare the slaw by thinly slicing the apple and toss in a bowl with the lemon juice.
- Then thinly slice the onion and fennel bulb and add to the apple.
- Add the mayonnaise and seasoning (to taste) and mix together.
- Place a burger in each bun and top with the slaw.
