Lemon and Blueberry Scones

Lemon and blueberry scones are a treat for the senses — a visual delight, a fragrant escape and a burst of flavour in every bite.

Lemon and Blueberry Scones

Preparation Time: 15 minutes

Air Fryer Setting: Bake

Temperature: 160°

Cooking Time: 12-15 minutes

                                                                                                                                 

Ingredients:

  • 300g self-raising flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 75g caster sugar
  • 100g butter (cut into cubes)
  • 1 large egg
  • 100ml natural yoghurt
  • 1 lemon
  • Juice ½ lemon
  • 150g fresh blueberries
  • Milk for brushing the tops
  • 1 small pot of clotted cream (to serve)
  • Blueberry compote (pureed blueberries, sugar and lemon)

                                                                                                                                  

Method:

  1. In a large mixing bowl, sift together the self-raising flour, caster sugar, baking powder, bicarbonate of soda and salt.
  2. Add the cold cubed butter to the dry mixture. Use your fingertips to rub the butter into the dry mix until the mixture resembles coarse breadcrumbs.
  3. In a separate jug, mix together the egg and yoghurt. Grate the lemon rind over the jug and add the lemon juice. Stir to combine.
  4. Pour the wet mixture into the dry mixture and stir gently until combined.
  5. Gently fold in the fresh blueberries.
  6. Continue mixing until a dough forms. Avoid overmixing to prevent a tough texture - the dough should be slightly sticky.
  7. Generously flour a work surface. Turn the dough out onto the floured surface and add a bit more flour to the top.
  8. Gently press the dough down while turning it into a circle, maintaining a depth of 1-2 inches.
  9. Use a floured pastry cutter to cut out scones from the dough. Place the cut scones onto a floured surface or plate.
  10. Spray the Air Fryer Crisper Plate with fry light or brush with a little oil.
  11. Place four of the scones onto the prepared Crisper Plate.
  12. Prick each scone a few times with a fork and brush the tops with a little milk.
  13. Cook the scones in the Air Fryer at 160° for about 7 minutes. Check the scones and if desired, flip them over for even browning.
  14. Continue to cook for another 5-7 minutes or until the scones are golden and cooked through.
  15. Leave all the scones to cool slightly.
  16. Serve them with clotted cream and a side of blueberry compote or jam for a delightful treat.
