Leftovers Frittata

Use up your Sunday Roast leftovers and turn them into a tasty and filling new recipe. We've included our favourite veggies, but you can adapt this to whatever ingredients you have used.

Leftovers Frittata

Preparation Time: 15 minutes

Serves: 2-4

Using the Dualit Hand Blender chopper bowl and whisk, this simple method creates a great option for the next day, without any goodness going to waste.


  • Roast potatoes
  • Carrots
  • Asparagus
  • Peas
  • Cheese
  • 2 eggs
  • Mixed herbs
  • Salt and pepper
  • Olive oil


  1. Slice the potatoes and roughly chop your vegetables in the Hand Blender chopper bowl.
  2. Mix the eggs, herbs and seasoning with the Hand Blender whisk attachment.
  3. Drizzle the olive oil into a pan or dish, add the egg mixture and vegetables then sprinkle with grated cheese.
  4. Cook in the oven at 180°c until golden brown.
