Lamb Kofta Balls

Tender lamb meatballs, full of the flavours of the Middle East!

Lamb Kofta Balls

Ras el Hanout is a Moroccan spice blend that is thought to have been a signature mix created by North African spice dealers who would combine a variety of the best spices that they had to offer to create a heady, aromatic blend. Sometimes, up to 50 spices would be combined - from cumin and coriander to ginger and cinnamon, the possibilities really are endless! It works perfectly in these Lamb Kofta Balls - made with the Dualit Toast Rack and the 700W Hand Blender.

Method
  1. Toast the 2 slices of bread and leave to stand in the Dualit Toast Rack to ensure they remain crispy.
  2. Once cooled, roughly tear the slices and add to the Chopping Bowl Attachment of the Dualit 700W Hand Blender and blitz into fine breadcrumbs. Tip these into a small bowl and place them to one side.
  3. Add 1 tablespoon of olive oil to a frying pan over medium heat. Drain the can of kidney beans and then lightly fry for a few minutes until the outside is just starting to crisp.
  4. Add the onion, garlic, fried kidney beans, mint leaves, lemon juice, Ras el hanout and other spices into the Chopping Bowl and pulse until the ingredients are chopped and beginning to form a paste.
  5. Place the minced lamb into a large bowl and add the chopped ingredient mix, along with the breadcrumbs and egg.
  6. Use your hands to combine all of the ingredients, ensuring that everything is well combined.
  7. Place the bowl into a fridge for one hour.
  8. Fill a bowl with cold water to wet your hands - this will help to make it easier for you to roll and shape your mince without it sticking.
  9. Use a dessert spoon to scoop even quantities of the mince mix and shape into small, even balls.
  10. Place the rolled lamb balls onto a parchment lined baking sheet, drizzle with a little olive oil and place in a preheated oven for 30-40 minutes. Alternatively, shallow fry in vegetable oil, turning to ensure all sides are cooked.
  11. Serve and enjoy!

Top Tips....

  • Use minced turkey, pork, beef or a suitable vegetarian mince in place of lamb depending on your preferences.
  • Try toasting garlic bread in place of regular sliced bread to make the breadcrumbs for a delicious twist Brown, white, untoasted stale bread or gluten free bread can also be used.
  • Coriander or parsley can be used in place of mint leaves.
  • These are great for grilling on a barbecue - oven bake for 20 minutes beforehand if required
  • Add chopped, sauteed spinach in place of kidney beans for an extra helping of your five a day!
