A fabulous way to treat a loved one this Valentine's Day, these Hot Chocolate Mug Cakes offer blissful indulgence in a matter of minutes. We've made ours in the Dualit Latte Cups & Saucers Set using the Dualit Hand Mixer.

Method
  1.  Place the dark chocolate chips in a heat proof bowl over a pan of boiling water. Stir continuously until all of the chocolate chips have melted.
  2.  Grease two Dualit Latte Cups with a little butter - this will allow your mug cakes to easily slide out once cooked.
  3.  Add the flour, sugar, baking powder, cocoa powder, sunflower oil, milk and egg to a bowl and use the Dualit Hand Mixer with Whisk Attachment to combine. Ensure that the batter is smooth, with no lumps and all the ingredients are well mixed.
  4.  Pour the melted chocolate chips into the cake batter and mix well.
  5.  Use a wooden spoon to stir in the white chocolate chips into the mix, aiming for an even distribution of chocolate chips amongst the batter.
  6.  Pour your cake batter into the two, greased Dualit Latte Cups.
  7.  Place one of the cups in the microwave and set the timer for 30 seconds.
  8.  After 30 seconds, remove the cup and add a half a tablespoon of the mini marshmallows into the cup. Return the cup to the microwave for 15 seconds.
  9.  Use a skewer to check if the mug cake is cooked. Insert the skewer into the centre of the cake - if it comes out clean, the cake is ready, if it does not, then place the cup back into the microwave for a further 15 seconds.
  10.  Repeat steps 7-9 with the second cup.
  11.  Use the squirty cream to create a frothy like topping and dust with a little cocoa powder. You can also add more mini marshmallows if you desire.

Top Tips...

  • The above timings are based on an 800w Microwave Oven, therefore cooking times may vary. A lower wattage may take longer to cook - follow the guidelines above and then increase the cooking time in 15 second intervals. A higher wattage will take less time to cook - try cooking in 15 second intervals from the start and check your cake between each interval to check it is cooked.
  • To customise and personalise your cake, try different fillings. We love Nutella, peanut butter, jam or caramel sauce but the possibilities are endless. Just check that your cake is cooked through, as cool fillings may increase cooking time.
  • You can also add different toppings, including: chopped nuts, chocolate shards, hundreds and thousands or even fresh fruit!
  • Make this mug cake mocha flavoured by adding a tablespoon of coffee to the batter in place of the milk.
  • Do not be tempted to overfill the cups with cake batter as the cakes will rise. You may notice that the cakes rise and then drop when you remove them from the microwave - do not worry, this is normal and will not affect the taste!
  • Always be careful when removing any items from a microwave as the cups may be hot.
