  • 2 sweet potatoes
  • 1 large white potato
  • 1 small swede
  • 2 large carrots
  • 3 medium cooked beetroots
  • 1 red capsicum pepper
  • 2 tbsp olive oil
  • 4 tbsp chipotle & lime seasoning
  • Salt & pepper
  • 2 tbsp loosened honey


  • 150g plain yoghurt
  • 2 tsp mint sauce



  1. Wash the potatoes and pat them dry to remove excess water. Cut the potatoes into 1-2 inch identical pieces.
  2. Peel the swede and carrots, then cut them into pieces that are similar in size to the potato pieces.
  3. Slice the pepper into 6-8 pieces. Cut the beetroots into similarly sized pieces as the other vegetables.
  4. In a large bowl, combine all the prepared vegetables. Add the olive oil, chipotle and lime seasoning, honey and a pinch of salt and pepper. Thoroughly mix everything together until the vegetables are evenly coated.
  5. Place the mixed vegetables onto the Air Fryer Crisper Plate, arranging them in a single layer to ensure even cooking.
  6. Set the Air Fryer to the appropriate temperature (200°) and cook the vegetables for 20 minutes.
  7. Shake the tray 2-3 times during cooking to ensure they cook evenly.
  8. While the vegetables are cooking, prepare the yoghurt dressing. In a small mixing bowl, combine the plain yoghurt and mint sauce. Mix well to create a creamy dressing.
  9. Once the roasted vegetables are crispy and cooked through, carefully remove them from the Air Fryer and arrange them on a large serving dish.
  10. Combine the yoghurt and mint sauce in a small bowl to make the dressing.
  11. Drizzle the dressing over the roasted vegetables just before serving. The creamy dressing complements the earthy flavours of the roasted root vegetables perfectly.
