Brandy butter is a Christmas essential. We used the Dualit Hand Blender with whisk attachment to make this. Spoon into a pretty glass dish for serving with a steaming Christmas Pudding.


  • 200g (7oz) best unsalted butter, very soft
  • 80g (3oz) caster sugar
  • 80g (3oz) icing sugar
  • 6 tbsp Cognac or brandy


  1. With the balloon whisk, beat the butter until white and fluffy.
  2. Beat in the sugars, a little at a time.
  3. Add the brandy carefully and slowly as it may try to separate.
  4. Cover and chill before serving.
