The apple slaw adds a lovely texture to these burgers.
Ingredients
500g pork mince
1 tsp fennel seeds
Fresh chilli (to taste) or a pinch of dried chilli flakes if preferred
Zest & juice of one lemon
2 tbsp of mayonnaise
1/2 a red onion
1 small fennel bulb
1 apple
4 burger buns
Method
Heat the oven to 200c/180c fan or gas mark 6
Put the pork, fennel seeds, chilli and half the lemon zest into
a large mixing bowl.
Mix together thoroughly using the Hand Mixer with flat beaters (use a
slow speed).
With wet hands, shape the mixture into four equal sized
patties.
Place on a baking tray and cook for approximately 20-30 minutes
until cooked through.
While the burgers are cooking, prepare the slaw by thinly
slicing the apple and toss in a bowl with the lemon juice.
Then thinly slice the onion and fennel bulb and add to the
apple.
Add the mayonnaise and seasoning (to taste) and mix
together.
Place a burger in each bun and top with the slaw.
Top tips...
Want to crank up the heat? Add some freshely chopped chili and
corriander
