Baked Bananas

Hot, sweet, juicy and satisfying, this tropical mix of fruit makes a lovely warm pudding, and is popular with children. Yoghurt or vanilla ice cream make the perfect accompaniments.

Ingredients

  • 4 ripe bananas,
  • 4 tbsp brown sugar
  • 50g (1¾ oz) butter
  • 2 ripe passion fruit (skins are wrinkly when ripe)
  • 50ml (1¾ fl oz) fresh orange juice
  • the juice of a lime
  • You will need a shallow baking dish approximately 16cm x 22cm (6 x 9 inches), well buttered.

Method

  1. Preheat oven to 200°C, set to Bake, rack position B.
  2. Peel the bananas and slice on the diagonal 1cm (½ inch) thick and place in the baking dish.
  3. Sprinkle over with sugar and dot with the butter.
  4. Bake for 10 minutes (if using a china dish, allow slightly longer) until the bananas are heated through, but not turning brown.
  5. Meanwhile scoop the seeds out of the passion fruit, mix with the orange and lime juice and warm gently in a pan - do not boil or it will taste metallic. Pour over the bananas.
  6. Serve hot.
