1.Roughly chop the onion, peppers, tomatoes, chillis and garlic
into chunky pieces.
2. Place all the chopped ingredients onto a lined, flat baking
tray greaseproof parchment and drizzle with olive oil, honey and
salt and pepper to taste. Place in the oven on 180º for 40 minutes,
covering half way through with foil.
3. Remove the roasted vegetables from the oven once cooked and
slightly charred and allow to cool.
4. When the roasted vegetables have cooled, transfer them into
the Dualit chopping bowl attachment for the 700W Hand
Blender. Add the chopped tomatoes and a tablespoon of water and
blend until the desired consistency is acquired. For a looser
consistency (perfect for pasta dishes), add a little more water,
but for dishes such as pizza, you may want the sauce a little
- This sauce can easily be frozen - simply separate into
portions, place in a freezer safe container and freeze until ready
for use. Ensure that the sauce is thoroughly thawed and heated
through when added to your dishes.
