Vanilla French Toast with Banana Jam

Is there anything better than delicious French Toast for an indulgent weekend breakfast or brunch? We’ve served ours with a sweet banana and cinnamon jam but use your favourite toppings to make it your own.

Vanilla French Toast with Banana Jam

Preparation Time: 15 minutes

This french toast is great to cook with the kids and it's quick and easy to make.

Ingredients (for the banana jam)
  • 4 ripe bananas
  • 2 tablespoons of brown sugar
  • Large knob of butter
  • Cinnamon stick or pinch of ground cinnamon
  • Squeeze of lemon juice

Method

  1. Using the Hand Blender jug and whisk attachment, whisk the eggs, vanilla, milk, sugar and salt until thoroughly combined.
  2. Lay the bread side by side in a shallow dish and evenly pour over the mixture. Leave the bread to soak whilst making the banana jam.
  3. Slice the bananas into thin pieces.
  4. In a pan, gently melt the butter with the cinnamon and then add the bananas, sugar and lemon juice.
  5. Cook gently for a few minutes until the bananas are softened and slightly breaking up.
  6. Keep warm and remove the cinnamon stick (if using) just before serving.
  7. In a large saucepan melt the butter and add two slices of the soaked bread.
  8. Cook until golden underneath and then turn over and cook the other side.
  9. Keep warm and repeat for the remaining two slices of bread.
  10. Serve toast with banana jam spread on top and drizzle with maple syrup or a dusting of icing sugar.
