- 4 ripe bananas
- 2 tablespoons of brown sugar
- Large knob of butter
- Cinnamon stick or pinch of ground cinnamon
- Squeeze of lemon juice

Method
- Using the Hand Blender jug and whisk attachment, whisk the eggs, vanilla, milk, sugar and salt until thoroughly combined.
- Lay the bread side by side in a shallow dish and evenly pour over the mixture. Leave the bread to soak whilst making the banana jam.
- Slice the bananas into thin pieces.
- In a pan, gently melt the butter with the cinnamon and then add the bananas, sugar and lemon juice.
- Cook gently for a few minutes until the bananas are softened and slightly breaking up.
- Keep warm and remove the cinnamon stick (if using) just before serving.
- In a large saucepan melt the butter and add two slices of the soaked bread.
- Cook until golden underneath and then turn over and cook the other side.
- Keep warm and repeat for the remaining two slices of bread.
- Serve toast with banana jam spread on top and drizzle with maple syrup or a dusting of icing sugar.
