- Heat oven to 160C/140F.
- Grease or line baking tray with greaseproof paper.
- Beat butter and sugar until smooth using a Hand Mixer.
- Very gently mix in the flour.
- Using your hands, squeeze the dough into a ball.
- Roll the dough to 5mm thick and shape using a biscuit cutter or cut into fingers.
- Place on a baking tray and chill in the fridge for 15 minutes.
- Sprinkle each biscuit with a little sugar and bake for 15-20 minutes.
- Cool on wire rack.
