Oat and Coconut Biscuits

These Oat and Coconut Biscuits are a delicious and healthier alternative to a traditional biscuit. The biscuits only take 10 minutes to bake and the coconut adds a lovely flavour and texture.

Oat and Coconut Biscuits

Prep Time: 15 minutes

Makes: 12-16

Cooking Time: 10 minutes

They're a bit like a homemade 'Anzac' cookie.

Method
  1. Heat oven to 180C/160F.
  2. Put the oats, coconut, flour and sugar into a bowl.
  3. Melt the butter in a small pan and stir in the honey.
  4. Add the bicarbonate of soda to 2 tablespoons of boiling water and then stir into butter mix.
  5. Make a well in the middle of the dry ingredients and pour in the butter & syrup mixture.
  6. Gently mix together.
  7. Put dessert spoons of the mixture onto a greased baking tray about 2.5cm apart to allow for spreading.
  8. Bake in batches for 8-10 minutes until golden brown.
  9. Leave to cool on wire rack.
