- Heat oven to 180C/160F.
- Put the oats, coconut, flour and sugar into a bowl.
- Melt the butter in a small pan and stir in the honey.
- Add the bicarbonate of soda to 2 tablespoons of boiling water and then stir into butter mix.
- Make a well in the middle of the dry ingredients and pour in the butter & syrup mixture.
- Gently mix together.
- Put dessert spoons of the mixture onto a greased baking tray about 2.5cm apart to allow for spreading.
- Bake in batches for 8-10 minutes until golden brown.
- Leave to cool on wire rack.
