Loaded Potatoes

Products Used: Air Fryer

 

Ingredients

  • 2 medium potatoes
  • Olive oil
  • 8 cherry tomatoes
  • 4 spring onions
  • Vegan coconut yogurt
  • Any chopped, fresh herbs you have e.g. chives, thyme, rosemary
  • Salt and pepper

 

Method

  1. Wash the potatoes and pat dry.
  2. Put in the Air Fryer. Set to temperature to 200c for 45-50 minutes. Longer if needed. Check halfway through and turn. If skin is browning too fast lower to 180c
  3. Remove and leave to cool.
  4. While the potatoes are cooking chop the tomatoes and spring onions.
  5. Once cool, cut the potatoes in half and scoop out the flesh. Retain the skin shells.
  6. Mash the potato with 2-3 tablespoons of the yogurt. Mix in the tomatoes and spring onions. Season to taste.
  7. Divide the potato mixture evenly between the skins.
  8. Place back into the Air Fryer at 180c until golden. This should take approximately 5-10 minutes.
  9. Serve with a dollop of yogurt on top and a sprinkling of the chopped herbs.
