B & B Breakfast Oat Muffins

Dualit's B & B Breakfast Oat Muffins are baked in our Air Fryer and offer a delightful contrast of textures and tastes.

B & B Breakfast Oat Muffins

Preparation Time: 15 minutes

Air Fryer Setting: Bake

Temperature: 160°

Cooking Time: 12-15 minutes

                                                                                                                              

Ingredients:

  • 2 medium ripe bananas
  • 150g rolled oats
  • 150g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 2 large eggs
  • 100ml buttermilk or plain yoghurt
  • 75g butter
  • 150g fresh blueberries
  • 2 tbsp soft brown sugar
  • 1-2 sprays of fry light
  • Chopped walnuts (optional)
  • Honey (for garnish)
  • 25g oats (for garnish)

 You will also need 12 silicone muffin cases.

                                                                                                                              

Method:

  1. In a blender, pulse 100g of oats until finely ground. Transfer the ground oats to a large mixing bowl.
  2. Add the self-raising flour, baking powder and brown sugar to the ground oats. Mix the dry ingredients together using a fork.
  3. Melt the butter and set aside to cool slightly.
  4. Mash the ripe bananas in a separate bowl until you achieve a smooth consistency.
  5. In a jug, whisk the eggs. Add the buttermilk and the melted butter and stir until well combined.
  6. Add the mashed bananas and vanilla essence to the wet mixture. Pour the wet mixture into the bowl with the dry ingredients. Use a Hand Mixer or a spoon to thoroughly combine the mixture. It should be slightly wet and sticky consistency.
  7. Gently fold in the blueberries and chopped walnuts (if using) into the muffin batter.
  8. Spray each silicone muffin case with a little fry light or sunflower oil.
  9. Spoon the muffin batter into each silicone muffin case, make sure you fill them to the top.
  10. Sprinkle a small amount of extra dry oats on top of each muffin case. If desired, place a walnut piece on top.
  11. Place as many muffin cases as can fit comfortably in the Air Fryer Crisper Tray (suggested up to 6 at a time).
  12. Bake the muffins for about 10-12 minutes on 160°.
  13. After 10 minutes, check the muffins by inserting a skewer into the centre. The skewer should come out slightly sticking but not wet. This ensures a moist texture.
  14. Once baked, carefully remove the muffins from the Air Fryer and place them on a cooling rack.
  15. Drizzle each muffin with a touch of honey for added sweetness.

Top tips: Larger muffin cases will need longer to bake. Lower the temperature by 5-10 degrees and cook for 15-18 minutes.
