Masterchef finalist Emma Spitzer has created this recipe
especially to make with the Dualit
Waffle Iron. The batter makes fluffy waffles that are full of
flavour just on their own, but who could say no to homemade
butterscotch sauce to top them with?!
Shopping List
Waffles:
- 60 grams melted butter, unsalted
- 2 large eggs
- 200mls of whole milk
- 120 grams of white spelt flour
- 1 teaspoon of baking powder
- 2 teaspoons of cinnamon
- 2 teaspoons of caster sugar
- Pinch of salt
- Icing sugar to serve
Butterscotch Sauce:
- 75 grams of unsalted butter
- 50 grams of light brown sugar
- 50 grams of caster sugar
- 30 grams of golden syrup
- 120 mls of double cream
Method
- Combine the butter, eggs and milk in a large bowl. Add the
sugar and sieve over the flour, baking powder, cinnamon and salt
and mix together.
- Heat all the butterscotch ingredients together in a pan except
the double cream. Let it simmer for around 5 minutes. Finally add
the cream and stir for a further minute before decanting to a
jug.
- Heat the waffle iron and place a large ladle of the batter in
the centre of the hot plate. Cook for around 2 minutes until golden
brown.
- Place the waffles on a plate and drizzle the sauce generously
over the waffles and around the plate and dust with icing
sugar.
Tip: Top with fresh berries for extra flavour.
