Roasted Pepper Sauce

Serves: 4 Preparation Time: 10 minutes Cooking Time: 15 minutes



  • 400g pack mixed capsicum peppers
  • 1 large red onion
  • 250g punnet cherry tomatoes
  • 1 tbsp tomato puree
  • 1 garlic glove
  • 1 red chilli or 1 tsp chilli flakes
  • 1 tsp smoked paprika
  • 1-2 tbsp sweet balsamic
  • Pinch of salt & pepper
  • 2 tbsp olive oil / fry light
  1. Slice and cut peppers into identical pieces.
  2. Peel and roughly chop the onion, garlic clove, cut the tomatoes in half and add to bowl with the chilli flakes, paprika salt & pepper, olive oil and combine
  3. Gently spoon the mix onto the preheated trivet in the airfryer and cook.
  4. Halfway through pause and shake.
  5. Remove from the airfryer and allow to cool, then place into the handblender beaker with the balsamic and tomato puree and blend until smooth.
  6. Stir into pasta, or spread on toast.
