This makes a thick and unctuous sauce.
Use it for coating a plate, on which a selection of freshly cut
tropical fruits can be arranged, or serve as a delicious
sauce
for coconut or vanilla ice-cream.
The blender is fantastic for removing the black seeds from the pulp
of passion fruit.
two passion fruit, halved
two mangoes, very ripe
two oranges, juiced
Scrape the passion fruit seeds into the blender jug, add some of
the orange juice, and pulse briefly to remove the juicy flesh
from the black seeds. Don't pulse so hard that you break the
seeds.
Rub the contents of the jug into a bowl through a stainless steel
mesh sieve with the back of a spoon or ladle, then discard the
seeds so you are left with pure passion fruit juice.
Return this to the blender.
Peel and stone the mangoes, chop the flesh, and add this to the
blender. Whizz until you have a
creamy sauce.
If necessary, adjust the consistency with more orange juice to make
it more liquid.
