Spring Toastie with Lamb, Mint and Pickled Onion

A good way to use up leftover roast spring lamb, is to use it to fill a toastie! Follow this recipe to make a tasty lunch or snack.
Serves: 1

Pickle your own sweet onions for the filling for this toasted sandwich, it's much easier than you think and worth the effort. Combined with roast lamb and the obligatory mint sauce, you can enjoy the taste of a Sunday roast on any day of the week! Created by @rebeccacooks and using the Dualit Classic Toaster and Sandwich Cage.

Ingredients

  • 1 red onion, finely sliced
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp white wine vinegar
  • 2 tbsp boiling water
  • Leftover roast lamb, pulled part with a fork
  • Rocket leaves
  • 2 tbsp crispy onions
  • 2 tbsp mayonnaise
  • 1 tsp wholegrain mustard
  • 1 tbsp mint sauce
  • 2 slices of white bread
Method
  1. To make the pickled onions, place the sliced red onion in a bowl and add the boiling water, white wine vinegar, salt and sugar. Mix well to dissolve and set aside to marinate.
  2. Lightly butter two slices of white bread.
  3. Next, in a small ramekin mix together the mayonnaise and wholegrain mustard. Spread generously over the unbuttered sides of the white bread.
  4. Add the pulled lamb to one slice of bread on top of the mayonnaise mix with some crispy onions and a drizzle of mint sauce. Drain the vinegar pickling marinade and add some of the pickled onions to the sandwich.
  5. Finally, add a handful of rocket to the bread, place the second slice of bread on top and place in a sandwich cage. Toast for 3 to 4 minutes until golden and crisp.
  6. Serve immediately and enjoy!
