Garlic & Thyme Roasties

Serves: 4 Preparation Time: 15 minutes Cooking Time: 25 minutes



  • 1Kg peeled and washed potatoes cut into even sizes
  • 1L salted water
  • 2 whole garlic cloves
  • 2 tbsp olive oil
  • 2-3 rosemary sprigs
  • 4g fresh thyme leaves
  • 1 tbsp cornflour
  • 25g butter
  • 25g rock salt or salt flakes
  • Pinch of salt
  • Pinch of pepper
  1. Microwave or boil the potatoes in the salted water until just softened.
  2. Drain the water off using a colander.
  3. Add the butter and cornflour to the potatoes in the colander and shake to combine and cover all the potatoes creating rough edges.
  4. Line a large baking tray with greaseproof parchment.
  5. Chop the thyme, garlic and rock salt together and add to the baking sheet.
  6. Place the covered potatoes onto the baking sheet and drizzle the olive oil over the top, use your hands to mix into the chopped garlic and herbs.
  7. Place into airfryer for 15 minutes.
  8. Shake the potatoes every 5 minutes to ensure even roasting.
