Earl Grey Fruitcake

This has to be a top choice for an afternoon tea break! Our friends at Breast Cancer Haven have come up with this delectable cake recipe and it tastes just great using our Earl Grey tea capsules.

Ingredients

  • 225ml/8fl oz Earl Grey tea, made with 2 capsules or 3 tea bags
  • 325g/12oz mixed, dried fruit (your choice)
  • 1 orange, juice and zest
  • 150g/6oz soft brown sugar
  • 275g/11oz self-raising flour
  • 1 large organic egg, beaten
  • 30g/1½oz flaked almonds

Method

  1. Make the tea and then soak the fruit in the tea for at least three hours.
  2. Set the oven to 140ºC/GM1. Line a 1kg/2lb loaf tin with greaseproof paper.
  3. Add the orange zest and juice to the tea mixture, along with the brown sugar and mix using the Hand Mixer with flat beaters (you may need a bigger bowl to combine all the ingredients). Fold in the flour and egg. Add the almonds and ensure the ingredients have been well mixed.
  4. Spoon into a loaf tin, spreading it evenly. Bake for 1 hour 20 minutes. Test that it is cooked with a skewer and leave to cool in the tin before serving.
