Brandy butter is a Christmas essential.
Pile onto a pretty glass dish for serving with a steaming christmas Pudding.
200g (7oz) best unsalted butter, very soft
80g (3oz) caster sugar
80g (3oz) icing sugar
6 tbsp Cognac or brandy
With the balloon whisk, beat the butter until white and fluffy.
Beat in the sugars, a little at a time.
Add the brandy carefully and slowly as it may try to separate.
Cover and chill.
