1. Cut the nectarine into slices and add the blackberries to a large, microwave-safe plastic jug or bowl.
2. Squeeze in the lemon juice and add the loosened honey.
3. Mix in the chopped or blended apple (and a lemon peel if desired).
4. Use the Dualit Hand Blender with a blending wand to blend all the ingredients until smooth.
5. Once blended, place the bowl into a microwave and heat for 15 minutes (based on 800W), the liquid should be bubbling. Check after 10 minutes.
6. Carefully remove the bowl, leave to cool and set a little.
7. Once cooled, transfer into a sterilized jar, cover and leave to sit in the fridge until ready to use.

Top tips:

• Jam is great for using up extra fruit leftovers.
• Spread generously on hot toast or use in a fruity Victoria sponge.
• If you like a chunky jam, pulse the fruit rather than blend until smooth.
• Sugar can be used in place of honey and the jam can be cooked on the hob in a saucepan.
• Use more or less honey, depending on how sweet you would prefer the jam.
• Tomatoes, chilies and peppers can be made into sweet jams and are tasty served on artisan bread and crackers with fresh cheese. If any extra liquid is needed then add a little water.
• Cooking apples and citrus fruit are high in pectin and are great for "setting" the jam. Any apples you have to hand can be used but you may have a looser jam, add citrus juice as well.
