Baked halloumi and plantain stacks.

Roasted, seasoned halloumi and plantain make this African aegean fusion a delicious snack. Paired up with our Hot pepper sauce or especially good with our mango and lime vinegarette.
Serves: 4 Preparation Time: 30 minutes Cooking Time: 20 minutes

This sweet and savoury dish has hints of west african and greek origins.

Ingredients

  • Halloumi 1 pack 227g
  • 1-2 Plantain (300-400g )
  • 2 Garlic cloves
  • 1 Sprig fresh rosemary
  • 3-4 Sprigs fresh thyme leaves.
  • 2 Tsp Onion salt.
  • 1 Tsp Pepper.
  • 2 Tbsp Cornflour.
  • For the plantain mix....
  • 2 Tbsp Cornflour
  • 1 Tsp Onion salt.
  • 2 Sprigs fresh thyme leaves.
  • 1 Tsp Nutmeg.
  • 100ml Sunflower oil. ( 125ml if opting to shallow fry )
