Turkey & Emmental Toastie

Are you looking for a no-fuss, delicious way to use up your Christmas leftovers? Then try Rebecca's boxing-day toastie recipe.

Experience a warming toastie featuring bold, festive flavours and delicious dipping gravy. It's comfort food at its best. The recipe was created and photographed by private caterer, photographer and videographer Rebecca Cooks. Use the Dualit 4 Slice NewGen Toaster and Classic Sandwich Cage to make this simply scrumptious snack.

Ingredients

  • 2 slices of sourdough bread
  • Leftover stuffing
  • Leftover roast turkey
  • Leftover pigs in blankets, sliced lengthways
  • Leftover roast potatoes, sliced
  • Leftover gravy
  • 3-4 slices of Emmental cheese
  • Rocket leaves
  • 1/2 red onion, finely sliced
  • 2 tbsp mayonnaise
  • 1 tbsp wholegrain mustard
Method
  1. In a small ramekin, mix together the mayonnaise and wholegrain mustard. Evenly spread the mustard mayo on each slice of bread.
  2. On one side of the bread, layer thin slices of roast turkey, stuffing, sliced potatoes and pigs in blankets - be careful not to overfill.
  3. On the other side, layer the Emmental cheese, sliced onions and rocket. Season with salt and pepper, cut in half and carefully place in the Dualit Sandwich Cage.
  4. Place in Dualit Toaster and toast till golden brown. While the toastie is cooking, heat the gravy till piping hot.
  5. Serve the toastie with a dipping bowl of gravy and enjoy!
