Coffee Cupcakes

Try these delightful cupcakes made using coffee from the Dualit coffee capsule range. Serve with a freshly brewed cappuccino for the perfect combination!

Makes 12 - Prep in 10 minuites - Bake for 20 minutes

  • 225g of plain flour
  • 2 teaspoons baking powder
  • 125g unsalted butter
  • 175g brown sugar
  • 2 eggs
  • 100 ml milk
  • 30 ml Dualit NX® or Origins Cafe coffee (one espresso shot)

Method

  1. Preheat the oven to 180C.
  2. Sift the flour and baking powder together then set aside.
  3. Cream the butter and sugar until fluffy. Add the eggs one at a time, scraping down the side of the bowl as necessary.
  4. Beat in the espresso. Mix in the flour in three parts, alternating with the milk.
  5. Spoon into cupcake wrappers and bake for 20 minutes or until cooked.
  6. Allow to cool, then top with chocolate buttercream icing (optional)

Amrik became ill just before he was due to do his A levels and go to university. Amrik was diagnosed with stage four Hodgkin lymphoma. When he was first diagnosed, Amrik was given some Macmillan information leaflets. He says that these were invaluable in helping him and his family prepare for what's to come. After he was given the all-clear, Amrik hosted a coffee morning for Macmillan at his school together with one of his teachers.

Karen's Story

Karen hosts a coffee morning as a way to support Macmillan Nurses who cared for her grandfather. It is a great reason to catch up over a cuppa and a slice of something yummy - and it's all for great cause.

"My grandfather passed away in 2012 and he was really well cared for by Macmillan nurses. After he died I think I was looking for a way to support the charity. Then I saw an advert for the coffee morning and I thought that this was a great way to give something back. I arranged a coffee morning at my house and it was a great success. We had a really good turnout and we had parents from the school and it was a lovely event and it was a lot of fun"

"I think that the coffee morning is a great event because it just brings people together in a relaxed and social way. Everything is so laid back and people can just chat and enjoy each other's company and there is a lovely atmosphere. It's perfect for people who want to come together and raise money."
